Ingredients

PREP: 10-15 MINUTES | COOKING TIME: 5-10 MINUTES

  • 4 fl oz Stir Fry Cashew Sauce
  • 5 oz rice noodles
  • 5 oz protein (your choice) 
  • 1 fl oz cooking oil (your choice of oil) 
  • 1 tsp minced garlic 
  • minced Thai chili or chili paste to your taste
  • 2 oz roasted, non-salted cashews 
  • 1 oz chopped mushrooms 
  • 1 oz chopped bell pepper
  • 1 oz chopped yellow onion
  • 1 oz chopped carrots
  • 1/2 oz green onion, cut into 2” pieces

Cooking

COOKING TIME: 5-10 MINUTES

  1. Before starting to cook, soak the rice noodles in cold water for at least five hours. Alternatively, you can bring a pot of water to a boil, fully submerge the rice noodles in the boiling water, and turn off your heat source. Leave the rice noodles in the pot until you are ready to use them. 
  2. Heat the pan over medium heat, pour the cooking oil into the pan and be sure to let it heat up before proceeding onto the next steps. 
  3. Add the garlic and spices and stir fry this mixture until it produces a fragrant aroma. Do not walk away from your pan at this point, as the garlic can burn very quickly! 
  4. Add your protein and cook it to the appropriate temperature.
  5. Add the mushroom, carrot, bell pepper and yellow onion. Mix all ingredients together four to five times. 
  6. Add the rice noodles directly from the pot of water into the pan. Do not drain the noodles, as the excess water from the noodles helped the ingredients to come together. 
  7. Stir fry all ingredients together, mixing continuously for one minute.
  8. Add the Stir Fry Sauce and mix all ingredients together for two minutes while the sauce absorbs into the noodles. 
  9. Add the green onion and cashews and mix two to three times.
  10. Turn off your heat source and plate your meal.
